Gluten Free Chocolate Chip Pizookie Recipe

  • ½ cup dairy free butter
  • ½ cup brown sugar
  • ½ cup evaporated cane sugar
  • 1 eggs
  • 1 tsp cold water
  • 1 tsp vanilla
  • 1½ cups gluten free all purpose flour (with xanthan gum)
  • ½ tsp baking soda
  • pinch of salt
  • ½ cup Enjoy Life mini dairy free chocolate chips
  1. In the base of an electric blender, cream the butter and both sugars for 3 minutes of until creamy.
  2. Next, add in the eggs, water, and vanilla and mix until incorporated.
  3. Then add in the flour, baking soda, salt and continue mixing until well incorporated.
  4. Lastly, add in the chips and mix until well blended throughout the dough.
  5. Spread dough into a 8 inch skillet and bake at 350 degrees for 20 minutes or until slightly golden brown on the edges.
