Gluten Free Rustic Berry Galette Recipe

Ingredients
  • For the Crust
  • 1¾ cup gluten free flour blend (with xanthan gum)
  • 1 tbsp evaporated cane sugar (or granulated white sugar)
  • pinch of salt
  • 12 tbsp cold unsalted butter but into ½ inch cubes
  • ¼ cup cold water
  • For the Filling
  • 3 cups Welch's Frozen Fruit Antioxidant Blend
  • 1 tbsp gluten free flour blend
  • ⅛ c evaporated cane sugar (or granulated white sugar)
  • 1 tsp lemon juice
  • 2 tbsp butter, cut into small pieces
Instructions
  1. Place the flour, sugar, and salt into a medium bowl and mix well.
  2. Add the butter and cut into the flour mixture by using a pastry blender, food processor, or fork until the mixture is crumbly and the butter is pea-sized or smaller.
  3. Add in the water and mix well, until the dough holds together well.
  4. Form into a disk and cover in plastic wrap.
  5. Let chill for one hour in the fridge.
  6. After one hour, place a piece of parchment paper onto a cookie sheet and preheat your oven to 375 degrees.
  7. Remove the dough from the fridge, unwrap it, and place it on a lightly floured surface.
  8. Lightly flour a rolling pin and carefully roll the dough to about ¼ inch thickness. The dough circle should be about 10 inches diameter.
  9. In another bowl, mix together all the filling ingredients and pour into the center of the dough.
  10. Slowly and carefully, fold the edges up onto the berry mixture.
  11. Next, place dabs of butter over the top.
  12. Bake for 40-50 minutes or until golden brown.
