Paleo Peanut Butter Eggs

  1. In a medium sized bowl, mix together the peanut butter, coconut flour, and maple syrup (or honey) until well combined.
  2. Scoop our 1-2 tbsp sized portions of the mixture and roll into a ball and place on a waxed paper lined baking sheet
  3. Flatten each ball with the back of a spoon and shape into an egg or circle if desired.
  4. Place baking sheet into the freezer for about 30 minutes.
  5. In a small bowl, add chocolate and coconut oil and microwave for about 1 minute.
  6. Stir together until chocolate is completely melted.
  7. Using a fork, dip peanut butter eggs into the chocolate and set back onto waxed paper to dry.
  8. Sprinkle with sea salt if desired.
