Rainbow Cereal Cake

Ingredients
  • For the Cake:
  • 12 cups of Fruity type cereal such as Fruity Pebbles
  • 2 bags of large marshmallows
  • 4 tbsp butter
  • For the ButterCream Frosting:
  • 3 cups powdered sugar
  • 1 cup butter
  • 1 tsp vanilla
  • 2-3 tbsp milk (I used almond milk!)
Instructions
  1. For the Cake:
  2. Grease two 8 inch pans and set aside.
  3. In a large microwavable bowl, place all the marshmallows and 4 tbsp of butter.
  4. Heat on high for 1 minute.
  5. Stir, making sure all the butter is melted.
  6. Mix in all 12 cups of cereal and make sure thoroughly incorporated.
  7. Pour half the cereal mixture into one pan and the other half into the other.
  8. Let cool. May place in the refrigerator to speed up cooling process.
  9. For the Buttercream Frosting:
  10. In the bowl of a standing mixer, whisk together the butter and powdered sugar.
  11. Mix on low speed until most of powdered sugar is mixed in. Then increase speed to high and beat for about 3 minutes.
  12. Add in vanilla.
  13. Add in milk 1 tbsp at a time until you reach the consistency of frosting that you desire.
  14. To Assemble Cake:
  15. Once cake is cooled, flip pans upside down and pat bottoms to release cake.
  16. Place one layer of cake onto a serving platter.
  17. Add half the buttercream frosting and spread around the entire top of the cake only.
  18. Add the second layer of cake on top of the buttercream.
  19. Place remaining buttercream over top of this layer and spread just over top as well.
