Crockpot Brownies

Ingredients
  • 8 oz bittersweet chocolate, chopped
  • ½ cup unsalted butter, cut into pieces
  • 1 cup sugar
  • 3 large eggs
  • 1 cup walnuts, chopped (optional)
  • 1 cup chocolate chips
  • 1¼ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ¾ tsp baking powder
  • ½ tsp salt
Instructions
  1. Coat the inside of your crockpot with cooking spray.
  2. Line the bottom with parchment paper and coat the top of the paper with cooking spray.
  3. Melt chocolate and butter together in the microwave in a microwave-safe bowl, stirring after 30 second intervals, until chocolate is melted.
  4. Add in sugar and mix well.
  5. Then add in eggs and mix well. Set aside.
  6. In another bowl, mix together flour, cocoa powder, baking powder and salt.
  7. Add in walnuts and chocolate chips and mix well.
  8. Pour dry ingredients into wet ingredients and stir until just combined.
  9. Pour into crockpot and smooth top.
  10. Cover and cook on low for 3 hours.
  11. Uncover and cook for 30 minutes.
  12. Insert a knife edge around brownies to loosen and place the crock (out of the pot) on a cooling rack to cool for 20-30 minutes.
  13. Turn out brownies and re-invert on cooling rack to continue the cooling process.
