Shoofly Pie

Ingredients
  • 1 pie crust of your choice (refrigerated, pre-made works well too!)
  • 1 cup all-purpose flour
  • ½ cup packed light brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • salt
  • 6 tbsp cold, unsalted butter cut into small cubes
  • 1 cup boiling water
  • ½ cup unsulfured molasses
  • ½ cup light corn syrup
  • 1 tsp baking soda
  • 1 large egg, lightly beaten
Instructions
  1. Roll out pie dough into a 9 inch pie plate, crimp edges and set aside.
  2. Preheat oven to 325 degrees.
  3. In a medium bowl, mix together flour, brown sugar, cinnamon, nutmeg and salt.
  4. Add butter and mix well with hands until you have a nice and crumbly mixture, set aside your crumb topping.
  5. In another medium bowl, whisk together boiling water, molasses and corn syrup
  6. Add in the baking soda, beaten egg and a pinch of salt.
  7. Pour this mixture into your pie shell.
  8. Sprinkle your crumbly pie topping over the filling and bake for about 50 minutes or until the crust and crumb topping are a nice golden brown and the middle is set.
  9. Cool for about 30 minutes and then enjoy your sweet Pennsylvania Amish delight.
