Chocolate Raspberry Tart

Ingredients
  • 32 chocolate wafer cookies
  • 2 tbsp sugar
  • coarse salt
  • 6 tbsp unsalted butter, melted
  • 12 oz semisweet chocolate chips
  • 1¼ cups heavy cream (I have even used heavy whipping cream and it still turns out awesome!)
  • 1½ cups (6 oz) fresh raspberries
Instructions
  1. Preheat your oven to 350 degrees.
  2. Combine cookies, sugar and ½ tsp salt in a food processor until fine crumbs form.
  3. Add you butter until mixture just comes together.
  4. Press crumbs into a 9 inch fluted tart pan with a removable bottom.
  5. Place on a baking sheet and bake for 20. Let cool.
  6. In a large bowl, combine chocolate and a pinch of salt and set aside.
  7. In a small saucepan bring cream to a bare simmer over medium-high heat.
  8. Immediately pour over chocolate and let stand for 1 minute.
  9. Stir gently until chocolate melts and the mixture is completely smooth.
  10. Pour into tart shell and refrigerate until set (about 30 minutes)
  11. Remove tart from pan and scatter raspberries on top.
