Chocolate Raspberry Tart

- 32 chocolate wafer cookies
- 2 tbsp sugar
- coarse salt
- 6 tbsp unsalted butter, melted
- 12 oz semisweet chocolate chips
- 1¼ cups heavy cream (I have even used heavy whipping cream and it still turns out awesome!)
- 1½ cups (6 oz) fresh raspberries
- Preheat your oven to 350 degrees.
- Combine cookies, sugar and ½ tsp salt in a food processor until fine crumbs form.
- Add you butter until mixture just comes together.
- Press crumbs into a 9 inch fluted tart pan with a removable bottom.
- Place on a baking sheet and bake for 20. Let cool.
- In a large bowl, combine chocolate and a pinch of salt and set aside.
- In a small saucepan bring cream to a bare simmer over medium-high heat.
- Immediately pour over chocolate and let stand for 1 minute.
- Stir gently until chocolate melts and the mixture is completely smooth.
- Pour into tart shell and refrigerate until set (about 30 minutes)
- Remove tart from pan and scatter raspberries on top.
