Today, I decided to try my hand at making chocolate peanut butter cups, otherwise known as the Reese’s peanut butter cup. I have been wanting to make these for so long but could never find a recipe that looked good enough…until now!
I found this recipe hereand decided to give it a whirl since it read to be almost too easy. If you can believe it, this recipe is so simple and quick I did it in record time right before the kidlets went down for a nap this afternoon. All day long we have been enjoying these sinful little treats, thank goodness they are made in mini cupcake liners! Now, I don’t feel so bad that we have eaten almost every single one of them. Just know that you are lucky I remembered to take some pictures before they are all gone, even if that means I had to take them with the camera on my phone (so sorry about the awful picture quality!)…hey, you gotta be quick before there are none left!

Homemade Peanut Butter Cups

Ingredients
- 12 mini cupcake liners
- 3/4 cup semisweet chocolate chips
- 1/2 cup creamy natural peanut butter (+ 2 Tbsp to add to the melted chocolate!)
- 1/4 cup powdered sugar
- 1/2 tsp vanilla
- pinch of fine sea salt (optional)
Instructions
- Melt your chips in the microwave, stirring often to make sure they don’t burn! (It should take 1-2 minutes.)
- Add in 2 Tbsp of peanut butter and stir until well-mixed.
- Let cool slightly and then place a heaping tsp of melted chocolate into each liner, spreading it all over the liner with the back of a spoon.
- Repeat with all 12 liners and then set the chocolate aside…you’ll use the rest later. Place liners in the fridge to harden.
- In another bowl, mix powdered sugar, remaining peanut butter, vanilla and salt together until paste-like.
- Divide peanut butter paste between the 12 mini cupcake liners, pressing gently to make sure it gets into all the nooks and crannies!
- Top with a heaping tsp of the remaining chocolate you set aside earlier (you may need to re-melt it!), spreading carefully so none of the peanut butter can be seen!
- Chill in the fridge for an hour.
