Here is a great meal that is perfect for a quick dinner (when the meatballs are cooked and made ahead!) when you work right up until that dinner hour and you come home and the littles are hungry and you are thinking ‘can I just give them a cheesestick and call it dinner?‘ Basically, my kind of meal for those days of the week where I am rushing to get dinner on the table after putting in some major hours at the office and I forgot to load up the crockpot! It also happens to be the perfect meal for those Sunday football games when you have invited lots of friends over and need some party food that won’t take all day to make…allowing you to enjoy the game too (ahhh yes, it is possible)!!!
Yummy AND messy…it can’t get better than this!
So, want to make the family happy with bellies full of food when you are short on time? Here is what you’ll need:
Saucy Meatball Subs

Ingredients
- 1 24 oz jar spaghetti sauce (I LOVE Newman’s Own Sockarooni for this…it has lots of peppers and spice in it which is just perfect for meatball subs!)
- 6 hoagie rolls
- 1 package slice provolone cheese
- For the meatballs…make ahead, cook and freeze so they are ready to go! (or you can use the pre-cooked frozen kind!!)
- 2 lbs ground beef
- 1 egg
- 1 onion grated or finely chopped
- 1 tsp salt
Instructions
- To make the meatballs:
- Mix ground beef, egg, onion, and salt together.
- Roll into tablespoon sized balls, place on a cookie sheet and bake at 350 degrees for about an hour or until they are cooked through and not pink in the center!
- Then, place meatballs in a medium sized saucepan and pour the spaghetti sauce on top of the meatballs.
- Warm on a medium-high flame until the sauce is nice and bubbly and your meatballs warmed through.
- While your sauce and meatballs are heating through, go ahead and split open your hoagie rolls and turn your oven on to 250 degrees.
- Place the rolls, open side up, onto a cookie sheet.
- Add 2 slices of provolone cheese to each and toast in the oven for 10-15 minutes.

Now, just serve them up with a nice green salad and enjoy a nice and saucy meal with your family tonight! And remember, messy kidlets equal happy kidlets when it comes to dinner time…I know, I know, it’s a sad but true fact us momma’s just have to deal with…deep breath!
