Donut Muffins

Oh my freakin’ goodness! I pulled this recipe out for the first time in a looong while last week and holy crap I forgot how good they were! These little mini-muffins are absolutely Fab-u-lous…the perfect size for munching with your morning coffee (yes, that would be decaf for me, thankyouverymuch) or having as a sweet little afternoon snack. They taste like yummy little donut holes, so there you have it…Donut Muffins…a genius name, I know.
The ingredients are simple and hopefully you already have most of them in your pantry. There is a bit of nutmeg in them which may seem strange but it really adds a nice “whoa, these are yummy” taste to these muffins, really. Let’s take a brief peek at all the deliciousness that is the Donut Muffin:

Alright, so here’s the recipe…enjoy!
Donut Muffins
Recipe Type: Breakfast
Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves: 18 mini muffins
Ingredients
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk (soy milk works nicely too!)
  • 1 tsp baking powder
  • 1 cup all-purpose flour
  • Cinnamon Sugar Topping:
  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 1 tsp cinnamon
Instructions
  1. Preheat your oven to 375 degrees and grease a mini-muffin tin, set aside.
  2. Mix up the 1/2 cup sugar, 1/4 cup butter and nutmeg in a large bowl.
  3. Then, add in the milk, baking powder and flour until just combined.
  4. Fill muffin tins about 3/4 full and bake for 15-20 minutes.
  5. During baking get your cinnamon-sugar topping mixed up.
  6. Melt 1/4 cup butter in a small bowl and then in a separate bowl mix together the cinnamon and sugar.
  7. When the muffins are done, remove them from the pan.
  8. Dip the tops in the melter butter and then roll the WHOLE muffin in the cinnamon-sugar mixture.
  9. Let cool.

Alright, so mix up your sugar, melted butter and nutmeg…

Then add in your flour, baking powder and milk…

Mix it all up until it is juuuust combined!

Fill your mini-muffin cups about 3/4 full and bake at 375 degrees for 15-20 minutes.
While the muffins are baking, mix up the remaining sugar and the cinnamon in a medium bowl. Then, melt the remaining butter in a small bowl.
When the muffins are finished remove them from the muffin tins and dip ONLY the tops in the melted butter. Then, roll the WHOLE muffin in the cinnamon-sugar mixture. Let cool and EAT!

Oh, why is it soooo hard to wait for them to cool?

Ok, so I couldn’t wait…hey, I’m pregnant…so sue me!!
SO GOOD, really!

    Thanks ladies!! They are soooooo good! You could totally do regular muffins too, just adjust your baking time and either make double the batter or just get less muffins!!!

    dern you and your easy delicious recipes!! i just happened to have everything needed in my pantry. i made mine with TJ’s whole wheat flower and a regular muffin tin…i got 10 from it. delish. the kids were sneaking them when i wasn’t looking and daddy barely got a taste when he got home!!

    Sounds good. I think I will try it with with whole grain, and see how it works in a loaf pan. Maybe even try a combo with a zuchini bread recipe?

    LOL! Been thinking about making these for the longest time. Finally seized the opportunity for our snow day on Wednesday. The girls and I liked them, but my hubby loved them. I turned around for a moment and when I looked back they were seriously all gone. He ate 7 of them by himself (we made them in the big muffin tin so there were only 12)! Thanks for the great recipes, will be trying more soon!

    Hmm, I would venture to guess around 20-24 minutes…but keep checking as all ovens are a bit different!!

I doubled the recipe and made them in a regular sized pan and they cooked up beautifully (I probably could’ve baked them for a couple more minutes, but I don’t care!) Yum. Such a great idea for something with ingredients you know you will have! This is getting bookmarked for sure.

    These are delicious and so easy if you just want to make something with ingredients you know you have on hand. I doubled the recipe and used a regular sized pan, and they baked up beautifully (better than recent recipes I’ve tried) But I probably could’ve cooked them a little longer. Either way- so good, and will be making these again for sure!!!
