These Flourless Almond Butter Banana Blender Muffins are dreamy bites of heaven. They make a wholesome and nutritious breakfast or snack and are perfect for eating on the go.
I always know when I make a recipe that is a clear favorite when my kids come home from school and eat every last crumb…no man left behind! This recipe is just that and continues to be a winner in our home every time I make it which makes my momma heart happy. I love when my kids eat good healthful food and don’t complain! And I happen to think this muffin recipe is even extra awesome for two more reasons…one: it is made in a blender (which means less mess aaaand easy clean up), and two: the ingredients are paleo-friendly meaning it is gluten and grain free as well as there are no refined sugars!
Oh! And I just thought of a third reason why these muffins are so awesome! My kids can make them all by themselves! Wooohooo!
So, we have a this particular Vitamix (which I absolutely love and waited years to get because I always had a regular blender and figured a vitamix wasn’t worth the price but boy was I wrong. It has truly been such a great investment for our family. We use it all the time. So if you have been thinking about getting one, let me tell you right now, stop hemming and hawing and just do it! I wish I would have bought it years ago!) and one of the reasons I really love it is that is has a cleaning feature….yes, you heard me right….A CLEANING FEATURE! You just add water and a bit of soap and you switch it to “clean” and it whirs all the water and soap around and really does do all the work for you. And this is exactly why my kids can totally make these muffins themselves…because they can flippin’ clean up after themselves too! It’s a Christmas miracle!
Now let’s get back to these awesome Flourless Almond Butter Banana Blender Muffins shall we! This recipe makes about 18 mini muffins that are just so poppable you will want to eat them all…and you totally could…I won’t tell anyone! We love using these Enjoy Life! dairy free chocolate chips when we want to make them a bit more sinful but you can totally leave them out…they are just as delicious without them. When we do add them I drop 4-5 chips into each muffin for the perfect chocolate fix.
Flourless Almond Butter Banana Blender Muffins
- 1/2 cup almond butter (recommend using no-stir!)
- 1 medium banana, peeled
- 1 large egg
- 1/4 cup maple syrup
- 1 tbsp vanilla
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup enjoy life chocolate chips (optional)
- In the base of a blender add almond butter, banana, egg, maple syrup, vanilla, baking soda, and salt and blend until smooth.
- Pour batter into a greased mini muffin pan until 3/4 full.
- Sprinkle chocolate chips over top (optional).
- Bake at 350 degrees for 9-10 minutes.
- Let cool in muffin pan for 5 minutes before removing.
- Enjoy!
Drop all ingredients (minus the chocolate chips if you are adding them!) into the base of your blender and blend until nice and smooth. Then pour your batter into a grease mini muffin pan and drop your chips on top if you’d like.
Bake at 350 degrees for 10 minutes. When done, let them cool in the muffin pan for around 5 minutes and then have at them!!
