Grain Free Chocolate Chip Banana Bread Muffin Recipe (Paleo, Gluten Free and Dairy Free)

I have the fondest memories of being in the kitchen with my mom while she baked, cooked dinner, and made her own flours and pasta. My siblings and I loved helping her make anything and everything in the kitchen. She created all sorts of delicious goodies without recipe cards and she let us get messy with her as she told us to add “about a cup of this” and a “palm-full of that”. Now that I’m a mom I want to have my children have those same memories. Having them push a chair up to the counter and measure and scoop with me is priceless! We love to create baked goods together most…I think because the outcome is always warm, gooey, and always tasty! Grain Free Chocolate Chip Banana Bread Muffin Recipe (Paleo, Gluten Free and Dairy Free) // SmashedPeasandCarrots.com If you have sensitivities to gluten or grains or dairy you are going to love these! There is also not one bit of nut butter in the recipe either (hooray for those with those sensitivities!) My kids (luckily!) have no sensitivities but we believe in limiting the amounts of those above ingredients so we create plenty of healthful recipes that do not use them.Grain Free Chocolate Chip Banana Bread Muffin Recipe (Paleo, Gluten Free and Dairy Free) // SmashedPeasandCarrots.com

Grain Free Chocolate Chip Banana Bread Muffin Recipe (Paleo, Gluten Free and Dairy Free)
Recipe Type: Breads
Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins
Serves: 12
Ingredients
  • 3 medium ripe bananas, mashed well
  • 2 eggs
  • 1/2 cup coconut flour
  • 1/4 cup coconut oil (in solid state)
  • 1 Tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (optional)
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, place all of the above ingredients except the chocolate chips.
  3. Mix until well combined.
  4. Add in the chocolate chips after batter is well mixed, if desired.
  5. Drop scoopfuls into lined muffin tins.
  6. Bake for 30 minutes or until slightly golden brown.
