If you have sensitivities to gluten or grains or dairy you are going to love these! There is also not one bit of nut butter in the recipe either (hooray for those with those sensitivities!) My kids (luckily!) have no sensitivities but we believe in limiting the amounts of those above ingredients so we create plenty of healthful recipes that do not use them.
- 3 medium ripe bananas, mashed well
- 2 eggs
- 1/2 cup coconut flour
- 1/4 cup coconut oil (in solid state)
- 1 Tbsp maple syrup
- 1 tsp vanilla
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (optional)
- Preheat oven to 350 degrees.
- In a medium mixing bowl, place all of the above ingredients except the chocolate chips.
- Mix until well combined.
- Add in the chocolate chips after batter is well mixed, if desired.
- Drop scoopfuls into lined muffin tins.
- Bake for 30 minutes or until slightly golden brown.
Oh my goodness. These are sooo good! The first time we ever made these my kids ate the entire batch and the entire time they were eating they kept saying to me, “mom…these are seriously the best!” Penelope even went as far as to say that her mouth was dancing, lol! I love that girl and her way with words!
Seriously, how good do they look! 
And once we are all done making our big ‘ole mess in the kitchen (and there is always a big one!)
