Hello! My name is Leca from Leca Unplugged and I’m a Target addict. Whew. Now that I have that off my chest we can be friends. I’m really excited that Maggie is letting me take over for her today. So buckle up your seat belt– it’s going to be a crazy ride with me at the wheel.
First, here are a few things you need to know about me. I am a mother of four really great kids. I love to tell a good story, cake is my kryptonite, I’m super good at picking the icky things off of any food item and I can tell you where every bathroom is located within a fifty mile radius. I’ve got mad skills– I know.
Today we’re going to be talking summer fun pies. There is nothing better than a fun summer dessert to get the pool parties started. If you are looking to impress your company with something amazing– this is the recipe for you. So here we go.
- 2 Pints of fresh blueberries (washed and cleaned)
- 2/3 C. sugar
- 2 T. flour
- 1 refrigerated pie crust
- Crumble Topping:
- 3/4 C. flour
- 1/3 C. sugar
- 1 stick butter
- Line a pie plate with refrigerated pie crust and set aside.
- Mix blueberries, sugar, and flour together in a bowl.
- Pour mixed ingredients into the pie crust. Set aside.
- Make the Crumble Topping:
- Fork together flour, sugar and butter until it is nice and crumbly.
- Sprinkle over pie and bake at 400 degrees for 45-50 minutes (or until golden and bubbly around the edges).
If you want to change it up you can use any summer fruit for this pie. I like to make a version of this with black raspberries from my yard. I’ve also tried peach, apple (just add a teaspoon of cinnamon to the apples), raspberry, cherry– any fruit you would like. Tweak it until you find the perfect pie for you.
I like to serve mine pipin’ hot with a little vanilla ice cream melting down the side. Oh baby!
