Gluten Free Nut Free Energy Bites
- 1 cup Gluten Free Rice Krispies
- 1 cup [url href=”http://amzn.to/2kMzhd0″]Gluten Free rolled oats[/url]
- 1/2 cup ground flaxseed
- 1/3 cup [url href=”http://amzn.to/2kODk4G”]coconut oil[/url] (in soft state)
- 1/3 cup [url href=”http://amzn.to/2kOAqNn”]maple syrup[/url]
- Mix all ingredients together in a medium sized bowl until well combined.
- Place in refrigerator for 30 minutes and then roll into balls.
- If mixture seems too sticky add a bit more oats.
The dry ingredients…so simple and good for you.
The wet ingredients. Umm, yeah. We like Trader Joe’s just a little bit 🙂
Here is my coconut oil in a soft state which would be at room temperature at our house. If you warm it up it becomes liquid which is a pretty neat science experiment in and of itself. You could use it in it’s liquid state but you would need to change your dry/wet ingredient ratios a bit! PS. you do not want to use this straight out of the fridge. It will be too hard and not mix well. Your best bet…the soft, semi-solid state!!
Aren’t oats just pretty to look at? You’ll need one cup of these pretties.
Mix all those goodies up so everything is nice and combined. Then refrigerate the mixture for about a half hour so that your coconut oil solidifies a bit. This will help make for easy ball rolling!
Make some today…they are truly deee-lish! 🙂

Yum! We will definitely be trying these! My only suggestion would to NOT use Bob’s Red Mill if you have a tree nut allergy that requires a dedicated facility. On the label it states that their products are manufactured on the same lines/in the same facility as tree nuts (they make almond flour.)

My kiddos and hubby LOVE these! We add in chia seeds and sometimes chopped sunflower or pumpkin seeds! We also use almond butter or sunflower butter because of peanut allergies! They are great no matter what you put in them!

This is so great! I can’t tell you how long I’ve been looking for a nut free energy bar/bite recipe that doesn’t include any of the faux- butters. My son has a severe peanut allergy so we don’t do any nut products and he really isn’t a fan of sun butter (I think mainly because it so closely resembles peanut butter) . Thank you … Thank you … Thank you!!! I can’t wait to try these 🙂

What can I substitute instead of coconut oil? We can’t send coconut-containing products to our school, and I’m allergic to it. I may try sunbutter, and see if that works.

Say someone was to make it with liquid coconut oil before noticing it has “solid state” in the directions. Do you know how much extra oil they would have to add so the balls would be formable? 🙂

we love these so much. I actually took the freedom to play with the recipe a little. holy cow! they have become a stable in our house. how do you keep them crunchy? i noticed that the day after making them they aren’t crunchy any longer… any suggestions would deb great.
