This past weekend I hosted a cookie exchange/chex mix party with a few of my momma pals and we were sans children if you can believe it! Okay, well I had one child. Ellie hung out with us ladies as she is nursing and was needing a little boob that day. It was the perfect get together as we had good conversation, lots and lots of cookies, bars, and other yummy desserts to plate up and a few fun Chex cereals recipes for fun party finger food!!
One of the cereal recipes I made was for Chex Lemon Buddies, it’s sorta like Puppy Chow {or I guess they renamed it Muddy Buddies although my family always called it Puppy Chow} but instead of peanut butter and milk chocolate chips it has lemon juice and white chocolate chips. Honestly…it was so good! Sweet and refreshing kinda like a lemon bar but with a quarter of the work…me likey! One of my momma friends even thought this would be the perfect Teacher gift if you gifted it in a pretty container!!
Here is the recipe in case you want to make this for one of your holiday get-togethers!!
Chex Lemon Buddies

Ingredients
- 9 cups Rice Chex cereal
- 1 1/4 cup white vanilla baking chips
- 1/4 cup butter or margarine
- 4 tsp grated lemon peel
- 2 Tbsp lemon juice
- 2 cups powdered sugar
Instructions
- Measure cereal into a large mixing bowl and set aside.
- In a microwaveable bowl, microwave chips, butter, lemon peel and juice uncovered on high for 1 minute; stir.
- Microwave about 30 more seconds or until mixture can be stirred smooth.
- Pour mixture over cereal, stirring until evenly coated.
- Pour into a 2-gallon resealable food storage plastic bag.
- Add powdered sugar, seal bag and shake until all the cereal is well-coated.
This is all you need, seriously no lie!
It only takes 15 minutes to make…heaven for a momma!
Grate up your lemon first!! I only used about 1 teaspoon of grated lemon peel and it still tasted nice and lemon-y! I will freely admit that I am lazy when it comes to grating things. Even owning a micro-planer doesn’t make it fun for me, ahh well. And just so ya know, next time I’ll probably skip this step completely like I usually tend to do in recipes that call for lemon peel, orange peel, lime peel, you get the gist.
Then melt up your chips, butter, lemon peel and lemon juice.
Pour over your dry cereal and stir until well-coated…
Then add your cereal to a large ziploc bag with 2 cups of powdered sugar. Give it to your kids to shake while they sing Jingle Bells using all the wrong words…thank you husband!
I always put my Puppy Chow in the fridge so that is what I did with this too. I think it gives it the perfect chill. YUM!

Aack, she’ll be eating baby food in another month or so! We’ve even started to notice that she is eyeing all of our food when we eat…already! I’m so not looking forward to changing THOSE diapers, eeew!

Well, I made this today and I can say it was a very bad idea to make it more than an hour before other people were coming over… I suspect there may still be a bite or two for my guests… maybe. Thanks for sharing!!! I didn’t have a lemon so I just used my lemon emulsant and it works great too. =)

Be forewarned, this mix needs to FULLY DRY before being stored in the ziploc bag. My friend and I unfortunately made this for a road trip, and the next morning it was all soggy 🙁 It was absolutely AMAZING when it was freshly made though!

Im about to try it with wheat chex because thats what I have. Has anyone tried with with something other than rice chex? all the comments made me really excited to try this!

I went ahead and used the wheat Chex, its pretty good but I think I would have gotten a lighter flavor/texture if I used the rice Chex. But with that lemony topping you could use anything! Mine didnt turn out with the pretty white look but its delic. Think I’ll make it for our Halloween party! Thanks for the great recipe

I would guess 3-5 days max just like most baked goods, although when I make it ours is usually gone in a day so I can’t really stand behind the expiration date too much! ;-

We have always called it Puppy Chow too! Our recipe is with Crispex cereal and not chex. It tastes less… cereal-y and more dessert-y that way :P. 8C Crispex, 1 C creamy pb, 1 C chocolate chips, 1/2 C margarine, 2 C powdered sugar 🙂 I’m SO going to try this lemon version! Thank you!!
