Pie Crust Cookies {For Your Sweetheart}

Hi, I’m Maggie and I love me some cookies.  Oh, you too?  Awesome.  Then let’s be friends.
So, friends today I am going to share with you one of the easiest cookies known to man.  And probably one of the most fattening too as pie crust is used to make them.  Pie. Crust. You heard me right folks.  That means lots of butter…or lard if you like yours that way.  Either way they are both no good for my waistline but darn it they make these cookies (and pie) oh-so-yummy.
I like the simplicity of sprinkling my pie crust cookies with cinnamon and sugar (especially for a little V-Day love) but a close second is to bake them up plain and then make a pie crust cookie sandwich with jam in the middle, raspberry jam is at the top of our list of favs.  If you so desire, you could even use nutella.  Ah gah!  So good.  Just sayin’.
Pie Crust Cookies
Recipe Type: Dessert
Prep time: 10 mins
Cook time: 8 mins
Total time: 18 mins
Ingredients
  • 1 box of packaged pie crusts
  • 3 tbsp butter, melted
  • 1/4 cup sugar
  • 2 tsp cinnamon
Instructions
  1. Roll out both of your pie crusts and brush the top with melted butter.
  2. Mix the cinnamon and sugar together in a small bowl and sprinkle on top of the melted butter.
  3. Cut out in cookie shapes of your choice.
  4. Place on a greased cookie sheet and bake at 425 for 8-9 minutes or until golden brown.

Make your pie crusts…or in my case, roll out your pre-packaged crusts, hehe!
Brush those babies nice and generously with the melted butter.
Aww yeah, glisten baby, glisten!
Then in a small bowl, mix together the cinnamon and sugar…
Liberally sprinkle it ALL. OVER.  Use it all up.  Maybe even make more.  Cinnamon sugar is awesome if you didn’t know.  Awesome.
Then since Valentine’s Day is right around the corner, find your handy dandy Heart cookie cutters and cut out some hearts.
Ahhh, sweetness!
Place your cut outs on a greased cookie sheet.
Bake at 425 degrees for about 8-9 minutes or until just turning golden brown…
Then, stare down the oven in hopes that the cookies will be done that much faster…
Nope.  It still takes 8-9 minutes.
I don’t think they’ve harnessed all their energy for good yet.
When they are done they will look awesome, just like this.
They will also taste awesome.
{This last part is important to note.}

    what a great idea! I have never thought to make this. As a child, my mom would do this with leftover crust after making pie! simple and cute!

    You could use tortillas instead of pie crust for a more healthy alternative! Might be a little harder to use the cutter to cut through, but would cut on the fat!

    I do this with pie crust only I roll it up and cut in slices.. Sometimes I cut up an apple and add to the butter/sugar/cinnamon.
    Roll it all up and bake until crust is lightly brown.. Sometimes it takes 1/2 hour to 45 mintues..
    350 degree oven.
    I have never thought of making the dough into heart shapes.. sprinkled with sugar/cinnamon. yum yum~!

    Adorable! Love the picture of your kiddos! These sound great with jam in the middle. Or a little bit of cream cheese and powdered sugar mixed well together topped with some lemon zest in melted jam. Ha that sounds really weird. Basically the filling from this recipe:
    Fruit Filled Pastry Hearts from Better Homes and Gardens

    1 17.3 ounce package frozen puff pastry (2 sheets)
    1/3 cup peach spreadable fruit or preserves (also good with raspberry)
    1 teaspoon finely shredded lemon peel
    1 cup peeled and finely chopped peaches (about 2) (or fresh raspberries)
    1 8 ounce package cream cheese, softened
    1/4 cup packed brown sugar
    1 teaspoon vanilla
    powdered sugar
    1 cup blueberries

    1. Thaw and unfold puff pastry sheets onto a lightly floured surface. Using a floured, 2 inch heart shaped cookie cutter cut pastry into about 45 heart shapes (do not reroll scraps). Place pastry hearts on an ungreased baking sheet. (number of hearts obviously depends on the size of your cookie cutter)

    2. Bake in a 375 F oven for 10-12 minutes or until puffed and golden. Cool on a wire rack. If desired, store, tightly covered, at room temperature for up to 12 hours.

    3. In a small saucepan combine spreadable fruit or preserves and lemon peel. Heat and stir until melted; cool. In a large mixing bowl combine peaches and blueberries. Add spread or preserves mixture and gently toss to combine; set aside.

    4. In a medium mixing bowl beat cream cheese, brown sugar, and vanilla with an electric mixer on medium-high speed until fluffy. (I’ve used powdered sugar instead of brown sugar)

    5. To assemble pastries, with a serrated knife, cut pastry hearts in half horizontally. Spread each of the bottom halves with about 1 teaspoon cream cheese mixture. Top each with a spoonful of fruit mixture and a pastry top. Serve immediately or cover and chill for up to 4 hours. Just before serving, lightly sprinkle with powdered sugar.

    OMG how cute! I used to love eating the cinnamon pie crusts left overs when my grandma & mom made pies! Brings bake childhood memories! what a clever idea of cutting them into shapes- they would just roll out the dough bake it and break it off – I love the cookie idea!!!

    I make pie crust rolls. In Canada they are called Pets de souer or nun’s farts. They are pie crust covered in butter with cinnamon and sugar, and rolled up. Then you cut the rolls into about an inch long and cook them. They are pretty yummy too plus really fattening, lol.

    Wow, when I was a little girl my mother use to use the left over dough and make little people and brush them with butter and spindle sugar and cimmon on them… i did the same thing when my kids were little.. this is so neat to know others enjoy this too… yum…
