One of the summer bucket list activities my littles came up with this year happened to be that they wanted to bake something with me in the kitchen. I love how they are into baking and being in the kitchen, it melts my heart, especially since my entire family loves being in the kitchen cooking and baking. It’s our love language. We decided that we would make Fruit Pizzas and since I am always trying to find a way to make things healthier, I came up with this easy clean up recipe for Grain-Free, Gluten-Free Fruit Pizzas that not only taste amazing but are super fun for children to decorate!
This recipe could not be more easy to make and so tasty to put together. It’s the perfect messy project for kids (because when do they not like anything messy!) and a great memory maker too! Here is the recipe:
- For the Cookie Pizza Base layer:
- 1 1/2 cup almond flour
- 1/4 cup butter, softened
- 3 TBSP honey
- 1/8 tsp salt
- 1/2 tsp vanilla
- 1/2 tsp almond extract
- For the Icing layer:
- 4 oz cream cheese, softened
- 1/8 cup maple syrup
- 1 tsp vanilla
- chopped fruit of your choice
- For the Cookie Pizza Base layer:
- Mix all the cookie ingredients together in a medium size bowl.
- On a parchment lined baking sheet, drop dough by the rounded tablespoon.
- Flatten cookies by pressing a wet palm over each mound of cookie dough.
- Bake at 350 degrees for 12 minutes or until just golden brown on the bottoms.
- For the Icing layer:
- Place all icing ingredients in a small bowl and mix together with a whisk until finely blended.
- Frost cooled cookies and then decorate with fruit of your choice.
You only need six ingredients to make these cookies (almond flour, salt, butter, honey, vanilla, and almond extract) and small hands can definitely help you measure and pour them! We love to use raw honey but regular ‘ol honey works well too!Once the cookie ingredient are mixed together, drop tablespoons of the dough onto a parchment lined baking sheet.
You can press the dough flat by using the palm of your hand (slightly wet is best!) Then bake at 350 degrees for 10-12 minutes. While the cookies are cooling, you can make the icing layer. It is just cream cheese, maple syrup, and some vanilla. Whisk until it is nice and smooth.And now your little helpers can work their creative magic, decorating these yummy Grain-Free, Gluten-Free Fruit Pizzas with whichever fresh fruit they love most!
