This Cowboy Caviar Recipe is seriously good stuff! People rave over it every time I make it! Full of fresh colorful peppers, tomatoes, and onion this hearty two-bean dip with a zesty vinaigrette-style dressing is a winner every time.
Seeing that football season in full swing, I have the perfect appetizer for you to bring to your next Sunday Football Party! If you have not heard of Cowboy Caviar you are in so much luck today! Many of my friends lovingly refer to this recipe as Cowboy Crack for how incredibly addicting it is, you just can’t stop eating it! And the best part is that it is pretty darn healthy with all those fresh veggies and a few yummy beans so honesty if you have to be addicted to something, well this isn’t so bad, right? 🙂
What I really love about this recipe is that it is so forgiving. You can use just about any color of pepper (red, green, yellow, orange) and it always turns out great. I personally love to add in a veggie of each color. So if I don’t have any yellow pepper I substitute frozen corn. And if you don’t love green peppers, you could substitute orange pepper and then add in avocado to get that nice green color added in to the mix. Any way I have ever made this recipe, it always turns out amazing!A few things I love to serve this app with are tortilla chips and pita chips or these super yummy plantain chips are also some of my favorites to use as dippers too! The plantain chips are also great if you are doing the Paleo program! Another one of my favorite things about this recipe which I completely forgot to mention earlier is that it is a paleo recipe, gluten and dairy-free too! Woohoo!
Cowboy Caviar Recipe
- 1 (15.5 oz) can black beans, drained
- 1 (15.5 oz) can black eyed peas, drained
- 3 large roma tomatoes, seeded and diced
- 1/2 yellow pepper, seeded and diced
- 1/2 green pepper, seeded and diced
- 1 avocado, diced
- 1 jalapeno, seeded and diced
- 1/3 red onion, diced
- [u][b]Dressing[/b][/u]
- 2 Tbsp lime juice
- 2 Tbsp extra virgin olive oil
- 2 Tbsp red wine vinegar’
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 tsp cumin
- 1/2 tsp chili powder
- In a small bowl, mix all ingredients for the dressing together and set aside.
- In a medium bowl, mix together black beans, black eyed peas, peppers, onion, avocado, jalapeno, and tomatoes.
- Pour the dressing over top and mix gently.
- Serve chilled with tortilla chips, pita bread chips or plantain chips.
- Enjoy!
When making the dressing, feel free to use bottled real lime juice in place of squeezing limes if needed. I have done this in a pinch and the Cowboy Caviar has always turned out excellent!And make sure to gently mix the dressing into the caviar so that you do not crush the beans, black eyed peas, or the avocado if you happen to be adding it! You want to maintain the pretty, colorful look of this appetizer without mixing it to a mushy pulp.
