2 Ingredient Low-Fat Cupcakes

I love quick cake mix desserts, hello cake mix cookies!  And one of my oldie but a goody favorite easy recipes is a box of yellow cake mix and a can of pumpkin for a hearty yet easy muffin…they freeze well too! Well,  I was surfing Pinterest one night (you can follow me here!) and I came across one recipe that just used a box of cake mix and a can of diet coke to make cupcakes.  Really?  That sounded pretty cool to me, I mean who doesn’t want to cut down on calories in their sweets every now and then so that they can just have twice as many servings 😉
We are a little strict with soda (or pop as it’s called here in Illinois!) and hardly ever buy it.  I don’t think my kids have even had more than a sip of it in all their wee lives and we hope it stays that way for a long, long time 🙂  We are especially not into Diet drinks and the aspartame in them, especially for my kiddos.  So I took a slight spin on that recipe and tried it with club soda.   I figured that maybe the recipe worked with the diet soda because of the carbonation.  And guess what?  It totally did.  The outcome is 24 (not 48 like a standard cake mix recipe makes!) deliciously moist cupcakes…super YUM!
Here is the oh-so-easy recipe in case you want to give it a whirl, and I suggest you do at 70 calories per cupcake!
PS.  This totally works with organic AND gluten-free cake mixes too, boo-yah!
2 Ingredient Low-Fat Cupcakes
Recipe Type: Dessert
Prep time: 5 mins
Cook time: 25 mins
Total time: 30 mins
Serves: 24
Ingredients
  • 1 box of cake mix
  • 1 1/2 cups of club soda
Instructions
  1. Mix the dry cake mix with the club soda until well combined.
  2. Pour into well greased cupcake tins and bake following the box directions.
  3. **Mine were ready a few minutes early so just watch that!

So easy I tell you!  And if you want a dee-lish easy and low-fat frosting you have got to try this one!

Just mix one container of Cool Whip Lite or Fat-Free with one box of your favorite dry pudding mix…that’s it!

Mix together and you have the perfect cake or cupcake topping!

Combine it with my 2-ingredient cupcakes for the perfect low-calorie treat!

      I’ve tried it (and I share your avoidance of artificial sweeteners) and I really like them. Have you tried the pumpkin and cake mix cupcakes? Those are also good. Just add a can of pumpkin to a cake mix and voila. Also yummy.

        The pumpkin and chocolate cake mix is a “Hungry Girl” recipe. LOVE THEM! I make those as the mini muffin tin. My 10-year-old asks me to make them. I don’t frost them and he gobbles them up (and so do I).

      If you make the pumpkin mix and cake mix ones, you can then use the pumpkin pie pudding mix and cool whip for the frosting.

      Do you make the pudding or just mix the cool whip with the powder?

        Nope, just add the dry pudding to a thawed container of cool whip!

      I second that question. I tried just mixing the cool whip with the powder for the pudding and it did not come out any where near as creamy as it looks in the pictures

        Yup, just mix the dry pudding directly into a thawed container of cool whip!

        Amazingly it doesn’t! It’s similar to those recipes where you mix in a can of soda but this is so much better for you with no artificial or chemical ingredients!
