Leprechaun Hat Cookies

Do you have some little ones in your life that you plan on celebrating St. Patrick’s Day with this year? Since I know a Guinness and an Irish mule are out of the question :-), I thought I’d share a fun holiday treat idea for the kiddies today. You are going to love how easy these little Leprechaun top hat cookies are that you just might do a happy dance! All you need are four ingredients and….no oven! That’s right, there is no baking needed…can I get a holla!!

Leprechaun Hat CookiesI’m no where near Irish but I love a good holiday celebration! Thank goodness for whoever created that calendar style list of random (possibly made up?) holidays that is circulating the internet these day…National Ice Cream Day? I’m there! National Taco Day? Bring it on! I could go on and on for my love of all the crazy days we can celebrate random things. I love it for the pure joy of getting to make fun things for my kids!

Leprechaun Hat Cookies

St. Patrick’s Day is such fun holiday to celebrate whether you are Irish or not. There is just something so happy and fun about it. In year’s past I created these fun applesauce toppers to put in my kids’ lunchboxes and my kids really loved getting these Lucky Charms cereal toppers as a snack last St. Patrick’s Day! I’m kinda bummed that St. Patrick’s Day falls on a non-school day this year, wah wah.:-( Leprechaun Hat Cookies Today I bring to you these super cute Leprechaun Hat Cookies…which are super similar (and dare I say, possibly cuter?!) than my Chocolate Pilgrim Hats I shared years ago. Who remembers those?!!! These cookies truly are easy to make. They may just take a little bit of patience as you wait for them to dry before you decorate them with the yellow ribbon around them brim. Leprechaun Hat Cookies

Leprechaun Hat Cookies
Recipe Type: Dessert
Prep time: 5 mins
Cook time: 1 min
Total time: 6 mins
Serves: 14
Ingredients
  • 1 package [url href=”http://amzn.to/2Hgf1rB”]Fudge Stripe Cookies[/url]
  • 1 package large marshmallows
  • 1 12 oz package [url href=”http://amzn.to/2HjfJ7l”]Wilton green candy melts[/url]
  • 1 12 oz package [url href=”http://amzn.to/2oZr6tN”]Wilton yellow candy melts[/url]
Instructions
  1. In a microwave safe bowl, place the green candy melts and microwave for 1 minute.
  2. Stir well and microwave for an additional 30 seconds if needed to completely melt smooth.
  3. Dip each cookie into the green melted candy using a fork. Tap any excess candy off on the side of the bowl. Let dry on a piece of waxed paper.
  4. Continue doing the same with the large marshmallows.
  5. Once dry, dip the bottom of one dipped marshmallow into the green melted candy (may need to slightly re-heat the candy) and place it on top of each dipped cookie baking a hat.
  6. In a plastic [url href=”http://amzn.to/2G7C88n”]ziploc bag,[/url] add half the bag of yellow candy melts and microwave for one minute.
  7. Massage bag with your hand to mix melted candy.
  8. Cut a tiny corner off the ziploc bag and carefully make a yellow line (the ribbon) around the base of the top part of the hat.
  9. Let cool completely and enjoy!

Leprechaun Hat Cookies These little Leprechaun Hat cookies are so fun to make! And don’t worry if they look a little messy as they are drying. You can break off any excess candy or weird edges and the yellow candy melt ribbon hides the spaces where the top of the hat sits on the brim.
