Chocolate Peanut Butter Protein Bars

No oven, no baking, just mix it, press it, top it with chocolate, and freeze. Five ingredients and you’ve got a protein bar that actually tastes like a treat.

The dough is just peanut butter, maple syrup, vanilla protein powder, and a splash of vanilla extract. Press it into a pan, melt some chocolate chips over the top, then let the freezer do the rest.

These are naturally gluten free thanks to the peanut butter, maple syrup, protein powder, and chocolate chips. Just double check your specific protein powder and chocolate chip brands to be sure, since some can have gluten-containing additives or be processed in a facility with wheat.

Recipe type: Snack

Prep time: 15 mins

Freeze time: 2-4 hours

Total time: about 2-4 hours

Serves: 12 bars

Ingredients

  • 1 1/4 cup peanut butter
  • 1/3 cup maple syrup
  • 1 scoop vanilla protein powder
  • Splash of vanilla extract
  • 1 cup chocolate chips

Instructions

  1. In a large bowl, mix the peanut butter, maple syrup, protein powder, and vanilla extract until you have a dough.
  2. Press into an 8×8 pan lined with parchment paper.
  3. Melt the chocolate chips and spread evenly over the top.
  4. Freeze for 2-4 hours, until set.
  5. Cut into bars.

Note: let the bars thaw for 15-30 minutes before eating for the best texture. Straight from the freezer they’re pretty hard, and letting them sit a bit makes them way more enjoyable.
