Time Crunch Taco Bell Quesadilla

Same quesadilla, made at home, no drive thru needed. One tortilla, rotisserie chicken, cheese, and Taco Bell’s own ranchero sauce straight from the bottle. Folded, pan fried, done.

This one’s saved us more than once when we’re Hungry. Ten minutes, barely any cleanup, high in protein, and it still feels like an actual lunch instead of just grabbing whatever’s in the pantry.

The sauce goes on first, then cheese, then chicken, then more cheese on top. Fold it over and let the pan do the rest.

Recipe type: Lunch

Prep time: 5 mins

Cook time: 5 mins

Total time: about 10 mins

Serves: 1

Ingredients

  • 1 tortilla
  • 1 serving Mexican style shredded cheese
  • 3 oz chicken (we use rotisserie)
  • Half a serving of Taco Bell Ranchero sauce
  • Avocado oil spray

Instructions

  1. Spread the ranchero sauce on half of the tortilla.
  2. Add a little cheese.
  3. Add the chicken.
  4. Top with the rest of the cheese.
  5. Fold the tortilla in half.
  6. Heat a pan to medium heat and spray with avocado oil.
  7. Place the folded tortilla in the pan.
  8. Let sit for 1-2 minutes, or until golden brown on the underside, then flip.
  9. Cook the other side the same way.
  10. Let cool for 5 minutes, then cut and enjoy.

Note: don’t let it cool too long, or the cheese starts to firm back up. A few minutes is enough to avoid burning yourself while it’s still warm and melted inside
