Gluten Free Garlic Parmesan Bites

Crispy on the outside, soft and cheesy in the middle, and packed with protein. These come together in one bowl, no dough kneading, no waiting around for anything to rise. Mix it, scoop it, bake it.

We used mozzarella, Greek yogurt, egg whites, gluten free flour, garlic powder, and parmesan. Everything goes in one bowl, gets mixed until it forms a sticky dough, then gets scooped into balls on a baking sheet. That’s the whole process.

Recipe type: Appetizer

Prep time: 10 mins

Cook time: 8-10 mins

Total time: about 20 mins

Serves: 6 (6 bites)

Ingredients

  • 1/2 cup shredded mozzarella (fat-free or part-skim)
  • 1/4 cup Greek yogurt
  • 2 tbsp egg whites
  • 4 tbsp gluten free flour
  • 1 tsp garlic powder
  • 1 tbsp grated parmesan
  • Optional: parsley and chili flakes

Instructions

  1. Preheat air fryer to 375 degrees
  2. In a bowl, mix the mozzarella, Greek yogurt, egg whites, almond flour, garlic powder, and parmesan together until it forms a sticky dough.
  3. Form into 6 balls on a foil-lined baking sheet, spaced apart.
  4. Air fry for 8-10 minutes, until golden brown on top.
  5. Let cool for a few minutes before eating.

Nutrition (whole batch, 6 bites)

  • Calories: ~520
  • Protein: ~48g

Macros will vary depending on the exact brands you use.

Note: The dough is pretty sticky, so wetting your hands or using a spoon to scoop makes it way easier to portion out.
