S’mores Cookies

All the campfire flavor – melty chocolate, toasted marshmallow, graham cracker crunch – in cookie form.

Chocolate, marshmallow, graham cracker – that combo just works. We wanted that same campfire flavor without actually needing a fire pit, so we turned it into a cookie you can make any night of the week.

Here’s how it works: graham cracker half on the bottom, marshmallow on top of that, then a scoop of chocolate chip cookie dough pressed over the whole thing so it bakes up and covers everything. As it bakes, the marshmallow gets gooey and toasted underneath the dough – that’s the best part.

Prep time: 10 mins

Cook time: 12-15 mins

Total time: 22-25 mins

Ingredients

  • 1/2 cup butter, melted
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 cup mini chocolate chips
  • 4 whole graham crackers
  • 8 marshmallows
  • pinch of salt

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, mix the melted butter with the granulated sugar and brown sugar until well combined.
  3. Beat in the egg and vanilla extract until smooth.
  4. Then add in the flour and baking soda – mixing as each is added in.
  5. Lay the graham cracker halves out on the prepared baking sheets, spaced a few inches apart. (we recommend baking 5 in the first batch and then the remaining 3 in a second batch)
  6. Place one marshmallow on top of each graham cracker half.
  7. Scoop the cookie dough over each marshmallow, pressing gently so the dough covers the marshmallow completely and meets the edges of the graham cracker.
  8. Bake for 12-15 minutes, until the dough is golden and set.
  9. Let the cookies cool on the pan for a few minutes.
  10. Take a pinch of salt and sprinkle over each cookie.

A couple of notes: press the dough gently but firmly over the marshmallow so it’s fully sealed in. If there are gaps, the marshmallow can bubble out the sides while baking (still delicious, just messier). And give them a few extra minutes to cool before eating. The marshmallow center stays seriously hot right out of the oven (be cautious).

Fair warning: these disappear fast. Might want to have some friends or family nearby to stop you from eating the whole batch by yourself.
